Rice and avocado salad recipe


Ingredients
2 avocados
1 bowl of white rice
2 scallions
1 cup peas
1 carrot
1 cucumber
Pimiento-stuffed olives
lemon
salt
Olive oil
pepper

Preparation of rice and avocado salad
Step 1: Peel the avocados and cut them in half. Remove the bone from inside with a knife and remove the flesh with a spoon. Cut avocado into thin slices and placing them in the source or bowl.
Step 2: Add the bowl of rice and peas

Step 3: Cut the carrot into small cubes and onion into thin slices.

Step 4: Peel the cucumber and let stand 10 minutes covered with coarse salt to remove the acidity. Wash and add the other ingredients.

Step 5: Prepare the seasoning with salt, pepper, oil and enough lemon juice. Pour the sauce over the salad and decorate with some olives stuffed with red pepper. Serve cold.
